Grilled courgette with feta & lemon

The easiest sometimes can be the most delicious. Making the most out of the end of the summer: grilled courgettes, topped with feta and lemon zest.

Ingredients

  • 2 courgettes
  • 1 tsp extra virgin olive oil
  • dried rosemary, black pepper and salt

Toppings

  • 70-100 gr feta cheese (crumbled)
  • 1/2 lemon (zest)
  • 1 tbsp sunflower seeds

Instructions

  1. Preheat the oven to 220ºC. Set a pan to medium heat, and mix the olive oil, herbs, salt and pepper in a glass.

  2. Slice each courgette in half, lengthwise, then chop each half into 2-3 pieces (or keep each half whole). Using a brush or, if you don't have one, a spoon, paint the inside of each courgette piece with the olive mixture. When the pan is hot, grill the courgettes for 2 mins on each side, or until it's light-brown toasted.

  3. Place the courgettes on a baking tray in the oven, bake for 15 minutes then sprinkle some feta cheese on them. Bake for another 10-15 minutes or until the cheese is slightly melted/toasted.

  4. Remove from oven and sprinkle lemon zest and sunflower seeds. Enjoy with a side salad or use as a side itself!

There are still courgettes out there to be eaten, and hungry people who need easy delicious ideas for dinner. So here is an idea… Slices and brush some courgettes with oil and rosemary, grill/fry them briefly, bake them, sprinkle some feta cheese and top with lemon zest and sunflower seeds.

This beautifully simple dish came to us through Linas Matkasse (a Swedish menu-ingredients delivery service), when I lived in Sweden, and I found it so perfect, I took a few pictures so I could share it here.
