Vegan banana bread

An easy, quick, vegan banana bread to make at home. It turns out fluffy, moist and delicious.

Ingredients

Wet ingredients

  • 10 dates (or 1/2 cup – 100gr- sugar)
  • 4 very ripe bananas
  • 1/4 cup vegetable oil (55 gr)
  • 1/4 cup plant-based milk (60ml)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice or apple cider vinegar

Dry ingredients

  • 2 cups flour (260 gr)
  • 1 tsp cinnamon
  • 1 tsp baking (bicarbonate) soda or 4 tsp baking powder
  • 1/2 tsp salt
  • 1 bunch roughly chopped walnuts

Instructions

  1. Preheat oven to 180ºC.

  2. Place the pitted dates in a bowl. Boil some water and pour it in the bowl, leave the dates to soften.

  3. Grab a large bowl. Using a fork, mash the bananas and dates. Add the oil, milk and vanilla extract – mix.

  4. Sift in the flour, cinnamon, salt and baking soda. Mix well using a spatula or wooden spoon, until all the flour has been absorbed and is wet.

  5. Chop and add walnuts, mix well.

  6. Brush the inside of a tin loaf of about 23 x 13 cm (9 x 5 inches) with oil. Sprinkle flour to cover the bottom and sides.

  7. Pour the bread dough in the tin loaf. Bake for 40 mins, then cover with tin foil and bake for another 10 mins, or until a toothpick inserted in the centre comes out with a couple of crumbs.

I hadn’t made banana bread in a while. Ben’s brother was over for the weekend and I thought this would be the perfect opportunity to find a good vegan banana bread that doen’t necessarily look for an egg sub. After browsing and reading a couple, I found this very simple and easy-to-follow recipe at The Baking Fairy.

I was curious to try a healthier version, without sugar. Instead, I used dates – it turned out delicious and just sweet enough! I guess the super ripeness of the bananas helped there too.

We added some chopped walnuts inside, but you could also add peanut butter, dark chocolate chips, seeds… Anything you want really.

We placed it on the table for fika just as it came out of the oven and it was devoured quick enough. I hope you enjoy this treat too!
