Vegan banana bread

An easy, quick, vegan banana bread to make at home. It turns out fluffy, moist and delicious.

Ingredients

Wet ingredients

  • 10 dates (or 1/2 cup - 100gr- sugar)
  • 4 very ripe bananas
  • 1/4 cup vegetable oil (55 gr)
  • 1/4 cup plant-based milk (60ml)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice or apple cider vinegar

Dry ingredients

  • 2 cups flour (260 gr)
  • 1 tsp cinnamon
  • 1 tsp baking (bicarbonate) soda or 4 tsp baking powder
  • 1/2 tsp salt
  • 1 bunch roughly chopped walnuts

Instructions

  1. Preheat oven to 180ÂșC.

  2. Place the pitted dates in a bowl. Boil some water and pour it in the bowl, leave the dates to soften.

  3. Grab a large bowl. Using a fork, mash the bananas and dates. Add the oil, milk and vanilla extract - mix.

  4. Sift in the flour, cinnamon, salt and baking soda. Mix well using a spatula or wooden spoon, until all the flour has been absorbed and is wet.

  5. Chop and add walnuts, mix well.

  6. Brush the inside of a tin loaf of about 23 x 13 cm (9 x 5 inches) with oil. Sprinkle flour to cover the bottom and sides.

  7. Pour the bread dough in the tin loaf. Bake for 40 mins, then cover with tin foil and bake for another 10 mins, or until a toothpick inserted in the centre comes out with a couple of crumbs.
