Simple Beetroot & Apple Salad

A simple raw salad that can be easily made in 10 minutes. Fresh, crunchy and lemony - this salad can be enjoyed as a side, on toast or mixed with rice or any other grain.

  • 2 beetroots preferably raw, and peeled
  • 1 apple
  • 1 handful spinach
  • 1 cup raw sunflower seeds
  • olive oil
  • salt and black pepper
  • 1/2 lemon juice
  • crumbled feta cheese optional


  1. Peel and grate the beetroots with a cheese grater or food processor.

  2. Slice the apple into thin sticks.

  3. Rinse the fresh spinach under water and chop roughly into thin slices.

  4. Mix all2 ingredients, add a little olive oil, salt, black pepper, lemon juice. Sprinkle sunflower seeds and optional crumbled feta cheese. Enjoy!
